With a passion to serve up something unique and fresh, Hull-based chef and business owner Amy Dickinson’s new venture The Little Seahorse is now making waves in the Yorkshire wedding industry.
YR Bride Editor Louise Lavigueur catches up with Amy to hear how a trip to Barcelona saw her embark on her next culinary chapter.
Oysters and champagne are the epitome of class and elegance.
But with couples seeking a more relaxed wedding menu, chef Amy Dickinson is delivering such delicacies in an innovative way.
“I’m a fish lover and I don’t eat meat,” explains Amy.
“I love visiting markets and on a trip to Barcelona I was in heaven as they had every type of fresh fish you could think of and it all tasted amazing.
“It got me thinking, we don’t really make high-end fish very readily available back home.
“There’s the traditional crab sticks in a tub, but for me that just doesn’t really cut it as there are so many others to enjoy.”
Since her ‘lightbulb moment’ in Spain and with a strong background in hospitality behind her, she was ready for her next business and The Little Seahorse was born.
And the first step was to find somewhere to sell her wares.
A once rusted vintage horse box was lovingly restored and equipped with a professional kitchen and beautiful pale blue exterior.
She continued: “The Little Seahorse is something unique, there’s nothing else like it.
“Our fish selection consists of lobster, crab, cravettes, salmon, mussels, oysters and much more.
“We can cater for anything up to 150-200 guests.
“I’m sure most people know that fish costs a bit more, especially when you are looking at whole seafood, like lobsters and crabs.
“But the beauty of The Little Seahorse is you can have canapes or starters, which means we can work with almost any budget.”
Amy said her Street Food bundle has been the most popular which includes; chilli chorizo prawns, Whitebait & aoli and mackerel & gherkin pate with olive bread and watercress.
And success came quickly when they were sought out to cater for former England goalkeeper Rob Green’s wife’s 40th birthday.
Amy added: “We had a great response from guests.
It was such a perfect event to showcase what we can do.”
The firm’s first wedding came just a week after they ‘officially launched’ The Little Seahorse.
Amy explained: “At our first wedding fayre we were approached by one of the other exhibitors who was getting married a week later. Her partner loved seafood and she wanted to surprise him.
“Because it was obviously short notice, understandably she didn’t have much left in the budget, but her family pitched in some money and we worked things out and came up with a menu for their 50 guests.”
In order to prepare for an event, Amy and her team at The Little Seahorse need a few months notice, but they will consider short notice bookings.
